This dish is festive – and easy!

If you’re looking for something pretty and delicious to put on your Christmas dinner table, I’ve got a great idea for you. Make a dish of marinated asparagus. The green asparagus spears and the chopped red bell peppers are festive to look at and even better to eat.

I serve it every year at our annual Christmas party and it never fails to be a big hit. People comment on it, taste it, and then ask for the recipe. I can’t begin to tell you how many times I’ve given this recipe out to our guests.

The beauty of this dish is not only its show off good looks, but also its easy preparation. You can make it several days in advance, which is a real time saver during the holiday rush.

" More information 3 cans asparagus spears 1/2 cup red bell peppers, chopped fine 1/2 cup minced onion 1/3 cup vegetable oil 1/2 cup vinegar 1/2 cup sugar Put vinegar and sugar in a small saucepan over low heat. Stir until sugar is dissolved. Add oil and heat until hot, not boiling. Add peppers and onions. In a serving dish, place half of the asparagus spears in a single layer. Pour half of the hot mixture over it. Layer the rest of the asparagus on top and cover with the remaining mixture. Cover and refrigerate overnight at least. This keeps well for several days.

All you do to make marinated asparagus is to assemble it, marinate it, and keep it in the refrigerator until you put it on the table. What could be easier? You can thank me now or thank me later for this one.

You’re welcome.
